The Six-Ingredient Cookie!

Some of the best recipes are the simplest ones — the kind you can make without a trip to the store and without overthinking it. This is that cookie. Sweetened entirely with maple syrup and made with just six pantry staples, it’s soft, lightly chewy, and endlessly adaptable.

The base is intentionally uncomplicated: flour, maple syrup, nut butter, and a few essentials. No refined sugar, no butter, no fuss. It’s the recipe I reach for when I want something homemade and comforting, but still aligned with the way I like to bake.

Ingredients:

  • 1 cup flour (e.g., all-purpose, 1:1 gf substitute, oat flour, whole wheat)
  • 1 tsp baking powder
  • ¼ tsp sea salt
  • ½ cup Sunnymede maple syrup
  • ½ cup nut butter of choice (I used almond butter)
  • 2 tsp vanilla extract
  • ½ cup chocolate chips (I like to use a roughly chopped chocolate bar) 

Recipe:

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Combine the flour, baking powder, and sea salt in a large bowl.
  3. Add in Sunnymede maple syrup, nut butter, vanilla extract, and chocolate.
  4. Mix with a spatula until a cookie dough texture is formed.
  5. Roll dough into evenly sized balls and place on a baking sheet, about an inch apart.
  6. Bake for 12-14 minutes until the edges are set, and the centers are just soft.
  7. Remove and let cool for 5 minutes in the pan before transferring to a wire rack.

Baker's Tip:

  • Swap chocolate chips for chopped nuts or dried fruit
  • Add cinnamon, espresso powder, or orange zest
  • Finish with flaky sea salt before baking
