3-Ingredient Samoas
These 3-ingredient cookies have become my latest afternoon obsession. They’re chewy, golden around the edges, naturally sweetened with Sunnymede pure maple syrup, and somehow taste like banana bread and a classic Samoa cookie all at once.
I topped mine with a drizzle of dark chocolate and a sprinkle of flaky sea salt because I firmly believe every good dessert uses chocolate and sea salt.
And did I mention they’re only three ingredients? A Girl Scout could never!
Ingredients:
- 1 ripe banana, mashed
- 1 tbsp Sunnymede pure maple syrup
- 1 cup shredded coconut
- For topping: melted chocolate, sea salt
Recipe:
- In a bowl, mash the banana. Add the coconut and maple syrup, stirring together until combined and a thick dough forms.
- Scoop out a dollop onto a parchment lined baking sheet, flattening slightly with a fork. Optional, but you can poke a hole in the center to make them look more like a traditional Samoa.
- Bake at 350 for 10ish minutes, until slightly golden on the edges.
- Remove from oven and let cool. While cooling, melt your chocolate with a teaspoon of coconut oil.
- Dip the bottom of each cookie into the melted chocolate. Drizzle the remaining chocolate on top. Finish with a sprinkle of sea salt.
- Put the cookies in the fridge until the chocolate hardens, then enjoy!
